The bears head looked to me like it was on a shaft coupled to a servo output. I would guess based on the action or motion that it was on a three way switch like a flap toggle switch. It wasn't subtle motion. The head moved right and left to a fixed point as if center toggle was looking ahead and either direction from there moved left or right. The motion moved about as fast a some servo's when switched like that.

The yoke may have been linked with rudder motion. Thats a common (sort of) method of making your plane look like it's being operated from the yoke. A spare servo can be connected with a Y cable to the Yoke so when you put in aileron or rudder commands, the Yoke moves with the control surface.

I don't know if this is what the pilot did. It's just an educated guess.
