NeuMotor 1912 2Y-400($200) can do it easy with 6s2p 4400mah 20cs @ 40 amps( cc45hv) on a 14X12 apc. Need seperate BEC for this setup

You could also goto 9s2p and use smaller props.. and get even more speed and still be in the 40 amps zone.

14X12 is probably more prop than you really want there.
I think you should go for at least 1000W, while keeping an eye on the weight.
edit: not sure what he means by "6s2p 4400mah ". I think current 4000 mAh LiPos can take 40A pretty easy.
