RCM used to have a Fl;ight Training Course book that was in depth. I think their books are still being sold via Traplet. Also Harry Higley's series of books are very detailed. I think these are available through Model Airplane News. There is good information here, if you can get past the petty arguing which is very previlent and of which I have been guilty of!

I agree with bkdavy, most kits have pretty good instructions and are clear on how their plane should be built. If covering has you stymied, there is downloadable video of doing this right here on R/CU. Generally, a "Sticky" at the top of a forum topic.
