Very interesting stuff! Like you, I have set my ailerons to be as symmetrical to the wing as possible - thinking being that it will make inverted flight as similar to normal as possible.
I've also tried programming flaperons on a few planes, with limited success - unless you are already experienced at it, I suggest a fairly small amount of flap to start with.
