For pitch, you should use a linear curve to get the full pitch range both negative and positive (0,25,50,75,100)

As far as throttle curves, they vary depending on a lot of things. Go to http://www.raptortechnique.com/ for good info and setups for various engines, etc.

But personally, I now use a governor.
