I don't know about the hardware store brands, but I find 5 minute epoxy unsuitable for modeling. The thirty minute epoxy is much thinner and allows for better coverage, a bit better penetration into the wood and a stronger bond. If it's important ( like a firewall ) You might as well clamp it and wait. If I am at the field, in a hurry or it doesn't really matter then I just use ca.
