i have 4 old futaba servos, fom an am controler, they have a male plug unlike the new plugs, female. can i just switch the plugs over?

Yes, if you want to. I have bought new in box AM servos and used them for trainers and smaller planes. They are probably between 40 and 48 inch pounds or there abouts?

But, before putting in a plane, give them a 'dry run' test with your receiver and transmitter pair to make sure those servos work as intended.

You'd need some J plugs, or G to J adapters.

By all means test them!! I even test new servos right out of the box these days. I get a lot of plugs from old servos, switches and Y harness and extensions.. I just clip them off and solder them onto the servos and cover the soldered section with heat shrink tubes. I even have some of the old servo extensions with the old plug style on one end and the newer type on the other. I guess I need to get out there and toss so of the old stuff I have.
