I've noticed when I assemble my charged batteries in the plane that they slowly discharge. Although there is a switch for the ESC/BEC is it still using a little juice anyway when off?

That switch only controls power to the receiver and servos. The rest of the ESC is being powered any time the battery is plugged in.
It's generally not a good idea to leave the battery plugged in when you're not intending to fly the plane. While very unlikely, it is entirely possible that the controller could fail in a way that causes the motor to start running, with no way to stop it. If the plane is sitting there on the ground untethered, God knows where it would go or who/what it would hit...
