I'm thinking about getting this setup: an astro 020 brushless, a Castle Creations Phoenix-35 ESC, and a 11.1v 2200mAh Li-Po...... will that burn up if I push it at full throttle from a full battery until the BEC kicks in?

wow, this is even more complicated than I thought, lol. I'm going to get a unicorn, they suggest a 5.5 x 4 prop with the astro but I think thats for a NiCd setup.

Electric stuff can make your head spin.....
should be ok with that setup....
assuming the battery is good quality...
I use a similar setup in my Zagi... Mega 1615/4, CC PHX 25, 2000mAh 3s1p Kokam battery...works well.....
I have to suggest..if you are going to continue with eflight... get a Watt meter,,,
I use the "Watts Up" Meter... it really helps to insure that you are not over-amping any part of the system...
Glow is easier.. but electric is cleaner!
