If it is 2 BL motors then I would "T" off the battery to both ESC's. Just remember that the ESC may cut one motor first when the battery reaches the voltage cut-off.
If it is a brushed motor, I'd use one ESC and run both motors in parallel. A 180 size motor will draw around or less than 5 amps.

I agree with Ryan. One ESC is more than enough. No need for the extra weight. If they were brushless you would need 2, but that's not the case and you will not draw enough amps to need a bigger ESC. In fact, an 8-12 amp esc would suffice. Not to mention save weight.
