Default Brushless setup for Zagi XS

I just traded out my stock Zagi XS setup for the following brushless system:

Mega 16/15/4
APC 6x4e
CC Phoenix 25
3S2P 3000 mAh 20C Lipo

YeeHaw!! The performance is awsome.

I bench tested the setup and it draws 28.1 amps at WOT. I have read that the motor/prop will unload somewhat in flight and the amperage draw will drop. I do not yet own an in-flight recorder so I have no direct experience with in-flight electrical performance. With this setup I have been flying at 1/2 to 3/4 throttle with 5 to 10 second WOT bursts. Is it true that the in-flight amps are lower than the bench test and what % drop is typical?
