.40-.46 size electric replacement
 

I'm wanting to go electric and already have 3 planes in the .32-.46 size range(and only 1 glow motor anyways) and would like to find a good outrunner brushless setup and a good AC (or AC/DC) charger+balancer I'm thinking I can get all this without batteries for somewhere in the $300 range (I'll probably spend another $100-150 on 3s LiPo's) but of course cheaper would be better. I would prefer something with more torque than rpm/v as I want to start some non-foamie biplane 3d flying (got a 3d electric but it's all styrofoam 20 oz deal)

also is there any kind of quick changeout mounting plate+ESC holder/heatsink system I could quickly (couple of minutes) change out the motor and speed control and just move everything to another plane.

I want to get away from glow because the stuff just about makes me ill and I hate the gunk film forming on everything

First of all: for this size planes it is not a good idea to buy 3S batteries. 4S or 5S is what you need!
Motors from 800 Watt and upwards.

could I use multiple packs with a EXC that supports 2 batteries or does that just increase the capacity you can use and nt the voltage total that can be utilized?

That depends on whether you link your two packs in series (doubles the voltage, capacity remains the same), or parallel (voltage remains the same, capacity is doubled).

Take two 2s 3000mAh packs: 7.4v nominal

Result if Series connected: 4s (14.8v), 3000mAh - if they are 10C packs - 30A max current draw
Result if Parallel connected: 2s (7.2v), 6000mAh - if they are 10C packs - 60A max current draw
