CC ESCs, can they truly handle the # of LiPos they say they can?

The subject asks it all..

I remember reading somewhere that they can't truly handle the maximum # of LiPos they say they can.

The reason I'm asking.

I'm converting a Ultra Sport 60 to electric. I'm using an CC 80 Amp ESC. A 60 Amp ESC would have probably been sufficient, but I went one size larger for comfort.

Current planned setup is a considerably nose heavy, and nearly a pound overweight. I need about 3 oz of tail weight to balance. I've got an alternative setup in mind that would probably save me 4 oz from the nose, and maybe an extra ounce or two from the tail.

It would require the 80 Amp ESC to run at maximum voltage (though lower amperage) I've modified the plane around the ESC, and I don't have the physical room to use a HV ESC.

Thanks in advance,

Oh!... just thought to add.. I was NOT going to use the BEC circuit in either motor/batt/ESC setup...

Short answer, Yes.

Try this on for size.
An HV-30 and 9S1P 2100 with a 4130 Kv=380, 13x6 prop. The whole power system is 2 pounds even.
