Default Mecanum(Omni) wheel control

Hi guys,
new to the forum and looking for some help.
For the last 20 years I have wanted to enter into a combat robotics competition. I am finally in a position where i can sink some hard earned cash into this project.
My forte is mechanical. I have a good electrical understanding but RC control is a bit out of my grasp.
I am wanting to control 4 wheels semi independently.
ideally I would like the setup at follows.
channel 1 controls forward and reverse of left 2 wheels.
Channel 2 controls forward and reverse of right 2 wheels
Channel 3 is where it gets tricky.
Channel 3 left needs to rotate front right and back left forwards whilst rotating front left and back right reverse and then channel 3 right would be the opposite.
Channel 3 will then allow me to strafe the bot.
One way I know this is done is using Arduino.
Ii was also wondering if a single ESC can be controlled from multiple channels.
