CAN YOU STILL CHARGE THEM IF BELOW 1.0 VOLTS ?
WHAT CAN YOU USE TO KEEP THEM FROM GOING BELOW 1.0 VOLTS ?

hrm... you might try NOT TYPING IN ALL CAPS AND DOUBLE POSTING =) TYPING IN ALL CAPS IS THE SAME AS YELLING anyways, now that that is out of the way =P
A123's I think can go down to 2v and one of the big differences is that they can take a rapid charge and have about a 35C discharge rating.

Use an ESC with low voltage cut off. Set the LVC at number of cells X2v (3 cells = 6v LVC).
