I have an EasyStar RTF. I am getting LiPo batteries but I am not sure if I can use 11.1V.

The RTF comes with the standard prop and Permax 400 Motor and a 8A (11A Max) and 7.2V-12V ESC

Do you think that I will be able to use the 11.1 1500mah LiPo without frying my ESC?

Yes, but you won't be able to use them without frying the motor.

The stock batteries are 7 or 8 cell. That's a nominal voltage of 8.4V to 9.6V. The nominal voltage of a 3-cell LiPoly is 11.1V. That motor is right at the bleeding edge of immediate self-destruction on stock power.

Thanks Matt for your reply... I'm sure that the motor will be fine. In fact, many people use a 11.1V pack with the Permax motor. The only difference I see is that they generally use 30amp ESCs. Thats almost 2 times larger than my 8amp ESC. I am going to try it tonight anyway...
