Ok im trying to get in to e powered flight but I don’t understand if I use 11.1v lipo dose the esc protect or reduce the volts to my receiver and servos or what

Yes.  the ESC has a BEC (battery eliminator circuit) that lowers the voltage for your electronics.  Note that there are ESC's that do not have a BEC, but most of them do and virtually all of the low current models do.
