I am planning to use two r7008sb receivers with two batteries in a giant scale plane with an 18 MZ. My question is would it be best to run both batteries to both receivers or separate them. I would like to run one elevator and one aileron on each receiver, just not sure if there is any drawbacks to either power setup.

You can do it the way you desire. However, connecting both battery packs to both receivers kind of defeats the purpose of having separate systems for redundancy. If you want separate systems, they should be completely separate.
