I am setting up a 100cc Yak. The servos I am looking at are the 7985 and the 7955. Will the 7955 in a single arangement be enough to handle the rudder @ 6volt? With a cost thats not that much different between the two. Couldn't I use the 7955 on all surfaces and have all the torque I need or is there a benefit to the 7985 servos. I have only used the 7985's on a 50 cc plane and liked the performance. What is the difference between these two servos besides the torque?

Optimum set up is 7945 or 7955's for the ailerons (2ea) and elevator (1ea) and a single 7950 on the rudder.

Yes, the big difference is the Titanium gears and heatsink case on the 7940,45,50,55's. All can also handle 2S Lipo with no regulators.
