I have had three HS81s die, all have been used on throttle in a fun fly model. Symptons are they kind of try to move and will return to centre if moved by hand - am I doing something wrong (I use a MPX 3030 Tx, 555 rx, and 6V battery, the other servos are a mix of Futaba and JR)

It sounds like the 81 is just not up to that particular task. I would try the HS-225BB instead.
