how do I figure out how much servo torque I need on each control surface?

This will be for an OMP 65" YAK, YS 1.10 with 16X6 APC prop, and approximate weight of 7 to 8 pounds.

Also, do we really need more power in a servo when the wing is stalled? I would not think so.

Nearly all manufacturers provide recommended servo torque values for the specific surface application of their models, I'd start here.

That said a precision servo would be my choice. Precision servos are typically coreless motored and or digitals. The 925/945 analogs, or digital 6978/6985, 5925/5945, 5955/5596 series would work very well. If your on a budget the 545, 625,635 645 analogs or maybe the 5625/5645 digitals. However make sure the servos noted are within the manufacturers torque requirements.

I'd use a 6.0V power system regardless of the servos employed
