how do i change my hitec eclipse 7 form mode 1 to mode 3

From page 6 of the manual:

If you wish to change the mode of the transmitter, say
from Mode 2 to Mode 1, return the radio to Hitec for
conversion.

"Mode 3 (reversed mode 2) = Left stick: Aileron and Elevator (cyclic) - Right stick: Throttle (Collective )and Rudder
What physical changes did you make?
With TXin Mode 1, simply swapping the Rudder and Aileron servos leads on the RX will give above results.
Youmay progress using a little lateral thinking with P-mixes as Eclipse has no provision electronically for other than modes 1 & 2, "
