The engine is discontinued, but still got carbs, cylinder/piston/conrod sets and crankshafts for the dedicated few.

I have a pair of 21's with one 'reversed' (counter rotating), is there props available for them eg. matched pairs.

Several prop manufacturers produce lefthanded props.

I have just purchased these as a pair, one has "R" stamped on the crankcase and has the exhaust on the opposite side, which I believe is counter rotating, did MVVS make these as pairs like this?

yes. The LH engines were available at a little extra cost.

Members in my club here are telling me that these are race engines, and are quite powerful for there size, is this true?
If so, as a '21', how would they compare say to an OS 25 for example.

more cubic inches have more torque at lower rpm. Well tuned, the mvvs has more power.

I read somewhere that it is best to run these 21's with castor oil as opposed to synthetic oil. The manual states that castor should be used during run in, but doesn't mention normal running.
The article I saw was about these engines overheating with synthetic oil and too much nitro, so I'm wondering what ratio of oil and nitro I should use, as I'm using them in a twin I want them to run smoothly and in sync.

max 2% nitro, 1:5 castor oil, or castor synthetic blend. (some blends work, some do not) Castor always works OK.
Engines do not overheat because of the oil. They just run worse with every tankful, until they get castor.
The manual nowhere says you can use synthetic.

That is correct!
All small MVVS engines (under 6,5cc ) runs better on 18-20% castor oil (or a mix of castor and synthetic) than on just 15% all synthetic oil(that's what most fliers over here use).
