I'm not sure if your talking about the Kevlar or the steel cables. IMO either will be plenty for a 60 size stick.

Most Kevlar is rated around 100 pounds, and I think the .032" cable would be well above that. If it's the .015" cable, then I might be a bit scared. It would probably be fine- but I tend to go a bit overboard on stuff like this.

Anything rated over 30 lb.s should be more than adequate. I use lots of 20 pound test fishing line on very large models. After all, you do not want to tear the moveable surfaces off their hinges.

I've used the DuBro coated cable on my Boxer 60 and it's worked fine for three years. I've also used the Sullivan kevlar cable on an O S .91 four stroke powerd Chipmunk with good results for twice that long.

I've had a cable break but the problem is at the attachment. If it is kinked or a sharp corner rubs, it will break. The cable itself is plenty strong.

It will work. I have been flying a Goldberg Ultimate w/Saito 150 and 2-56 Dubro pull-pull kit on the rudder for 3 seasons. No breaks yet! Keep in mind that a 100 oz-in servo (probably bigger than what you are using) with a 1" arm will only generate 100 oz of pull which is 6.25 pounds. As pointed out by greenboot, sharp corners where abrasions can take place is the killer.
