How well do gyro's (pezo type) work in airplanes Do you install
them on all 3 control surfaces ? Any negative feedback ?
Will it hinder acrobatics ?

It all depends on what you are trying to achieve, and what kind of gyro system you install. I will limit my comments that that which I have direct experience. There are others with far more than mine. If you check out our Club's web site (www.bcflyers.com), you should find a series of articles on their use.
If you use a gyro that is ground controllable, it will not affect your aerobatics. I have only installed my gyro on rudder control. It has provided significant benefits in ground handling. It makes the bird take a straight line down the runway during take-off roll. It will correct for crosswind. Just about eliminates ground looping. It will make aerobatics a bit funky, but I turn mine off in the air anyway.
