Question ESC low voltage Question

I have a Sonicwake RC boat, 1900kv motor, 120 amp ESC. compatible with 2s or 3s lipo bat.
When using (2) 7.4v 5000mAh 2S 50C lipo batteries, the ESC can handle full throttle without setting off the low voltage flashing red light.
but when using (2) 11.1v 5000mAh 3s 50C lipo batteries, the ESC will set off the low voltage flashing red light, and cut power by 1/2, if I hold the transmitter throttle at full speed approximately 5-6 sec. What can be done to rectify this problem
