Default Flytec Motor Upgrade

I am planning to upgrade the motors on a Flytec bait boat, but it seems that I will need an ESC for each motor and the boat’s current motors are run directly from a circuit board. Can I wire the ESC between the circuit board and the motor? Will that impact the anti-yaw programming?

No. The outputs that drive motors are very different to the outputs on a radio receiver that drives he ESCs. The ESCs take the coded pulsed outputs from the radio and convert it to something that the motor can use, whether brushed or brushless motors are used.
You will almost certainly need to upgrade the radio to hobby grade components, rather than what sounds like a proprietary combined radio and speed control board.
Would "anti yaw programming" be roughly equivalent to "steering"?
