Default K&B 7.5 outboard

I've got 2 of these motors and I'll try to help, I'm not a pro but have some 'sperience.
Needle valve settings: start at about 2-1/2 to 3 turns out on the needle, that should get the motor running then adjust it from there depending on your weather conditions, that's why they don't run the same every time.
Throttle stop settings: set up your radio with everything in the centered or neutral positions. Open the carb fully with the radio and carb then lock down the carb there. Let off the throttle on the radio and adjust your idle setting from there with the trim. You should see about 1/16" of gap in the barrel, adjust it from there once the motor is running.
Once you get it fired up, set the carb so that it has a little lag to it when you hit the throttle from idle to full speed but do this quickly, don't hold it open for any longer than you have to. This ought to put you in the neighborhood.
You're right, books don't help much and are sometimes vague on the answers that we really need. Good luck with your boat and let us know how things go.

I also have one of these and it starts and runs fine, but cuts out when you apply full power. Acceleration is great, but it seems just when it starts to make good power it dies. I have only been using 15% nitro, could that be the problem?
