what's the difference?

can someone tell me whats the difference between a 19t motor to a 12t motor... what really happens with the motor if the number of turns goes up or the goes down... i also heard double, triple and quad... my friend had a 17t triple and i only had a 23t single... we drag race on a car park... my car lead at the start but on the stretch 17t triple seems to have top speed... can someone give an explanation... its ok if the explanation is technical... i can handle it... :D
