Can you run two 2s lipo's together on this motor?

In series or parallel? Parallel is no issue, you're just increasing the capacity. Series is another matter and will depend on whether the motor and esc can handle 14.8v.

2s is the max voltage you'd want to feed a Castle 9000. So, 2 2s batteries would only work if used in parallel for more run time, series would be way too much voltage.

I was thinking about in a parallel but would a 7700 stand up to it in a series?

The people who drag race use the 7700 on 4s and they were talking about using the 9000 this year.
