Using multiple gyros

Just wondering...

Is it possible to use additional gyros for elevator and cyclic?

I think it is doable, but I don't know why you would want to. They make a thing called a copilot that helps straighten the heli up, but you are better off learning to fly it. If you want to fly on total auto pilot, you can hand the radio to someone else. :)
