Rob -
I epoxy some 5/8" or 1/2"x5/16" ply or bass/spruce servo rails to the hatch with Aeropoxy (or good 30 minute epoxy) and screw them to the rails as usual. The hatches are held down by 4 to 6 (dual servo hatch) screws into 3/8" wide x 1/8" tohick plates Aeropoxied to the underside of the wing skins.
Also, if the hatches are very thin (3/32" or 1/16" balsa/composite) or just not stiff enough, I laminate some 2 oz. carbon cloth to the underside of the hatch first. Make sure you scuff the carbon/epoxy with 80 or 100 grit before gluing the rails on.
Here are a couple pics from my Viperjet build (flap and aileron servos to 1/16" ply hatch)...hope this helps.
