Jr 11X Tx

Why do they make an 11 channel radio but no 11 channel Rx? I'm guessing you just use a 12 channel Rx and have one extra? Is there some other way to use it that I'm not aware of?

Yes. You could also just buy a receiver with less than 11 if you don't need to all eleven channels.
