What is the difference between the JR R 955 Single Conversion 10-Channel PCM Receiver and the JR R945 Dual Conversion 10-Channel PCM Receiver? Which is better or more reliable? What do each of them do?

A dual conversion receiver has better noise rejection than a single conversion. Think of it as two filters is better than one filter.

Default Reciever question

PCM is Pulse Coded Modulation.
Not to get too technical, think of (FM) PPM (Pulse Position Modulation) as analog and PCM is digital. The basic difference is that PPM will not validate the information just try to use it. PCM will validate the informaion and if it is not correct it will ignore it.
