Default Servo torque

Is there a rule of thumb for the size of airplane in regards to torque of a servo?

When in doubt go for more torque.

Rather than size alone, it is more a function of the type of flying to be attempted.
Pattern is a rather light load when compared to 3D where your set up has poor mechanical advantage choices due to the extreme throws required.

Size counts but is not the only factor or even the over-riding one until you get to the upper extremes.

Well my flying would not be 3D! I am to old for that. Hell when I got back into this hobby I did not know what 3D was. Low and slow "like the driver".
