Stationary Control for Brushless ESC

Hello Everyone.... my very first post.
I am using a brushless 540 motor for a very non-conventional use, where it will be mounted on a stand and I hope to start and stop it with a proximity sensor. The motor will need to run at a fixed speed. I currently are controlling the esc with a servo tester, but my problem is that every time I stop the motor and restart it, I have to rotate the servo tester pot to re-start the motor. How can I overcome this issue and have my motor immediately accelerate up to set speed when I give it a signal to start?
