Volcano EPX Pro problem.. Please help!!

Good Afternoon, I am new to the RC world, like not even 2 days new, just got my first hobby truck Wednesday. I picked up a Redcat Volcano EPX Pro and 2 extra batteries. I charged the lipo that came with the truck over night, Wed, then the other 2 batteries yesterday. But here is my issue, I plugged the stock battery in yesterday and started driving in my yard. I drove away from me maybe 40 feet turned around and came back. When I let off the throttle the second time the I went to give it some juice and nothing happened. I could the esc fan on and could steer but no throttle. So I went over turned the truck off and double checked my connections and then turned the truck back on. And tada I had throttle. Again, I drove 40 feet away and came back. and again I lost throttle. So I went and looked it up online and read the batteries that come with the truck are junk. but those where all saying the nimh ones. nothing about the lipo. But anyways, by this time one of the other batteries, which is a 2s 7.4 5800mah 30c, was charged so I took the advice and tried a different battery. Again down and back and boom no throttle. This time I turned just the truck off to check the connections then turned it back on. and Again I had throttle, down and back I go and again losing throttle. I tried just turning the truck of and on again and that seems to give me 2 accelerations the loss of throttle, and I repeated the process trying not to let off the throttle. It seems like I am resetting something by turning it off and back on again then it cuts the throttle out. But I have no idea and am kinda getting discouraged with it. Please Help if there is something I am missing. And please no "return the Redcat and get something better" if I had the money I would of sprung for a nitro instead. but I figured I can learn on this one then pass it off to my nephew to play around with.

Are there any lights flashing on the ESC when this happens ?

At first thought, sounds like the LVC (Low Voltage Cutoff) is "kicking in" and doing it's job. But when using NiMh batteries...LVC should be turned off. When using LiPo packs...the low voltage cutoff should be turned on to prevent over discharging of the cells. Are the LiPo packs balanced, and fully charged?
