When I was framing mine up I noticed the same thing. I just cut a couple of extra formers and started my hatch about 1/2 inch behind the cabanes. There is plenty of room to access the tank area...

It's a lot easier to bend the cabanes per the plan and fit the outer struts this also provides a little more room for construction errors. Also you need to set the incidence off the cabanes. I bent...

If you go back into the posts a few pages you will find a detail by bbt. I modified mine a bit to accomodate the tail wheel I'm using. He also provided a detail for placing servos in the tail. ...

I use Scotts RC Images www.scottsrc.com He does quite a bit of custom work for a very reasonable price. Check out his website for work he did on my Stinger, Edge and Aeroshell Texan.
