No, they are not included, you have to buy the "Optional gear doors" to get them.

Yes, mine is the same. I bought some Tamiya paint in spray which seems to be very close: TS-64 Dark Mica Blue. I did not not paint them yet as I did not start building the plane...

There are 2 servos for the elevator (one per half) and the requested torque is not that high, so 2 x 4kg/cm is plenty enough. If you need one with more power it will be the rudder one, but 6kg/cm...
