I would stick with the 12S setup so as to keep the current draw down (6S 5000 x 2 sounds great, with a max current draw of 80A this is less than 20C) .
I have used the Turnigy SK3 aerodrive motors...

Definitely right and down by 2 to 3 degrees or you can make it straight ahead and mix down elevator and right rudder with increase in throttle.

I would be tempted to use 2 intellect 1600mah Nimh 5 cell packs mounted at each side of the engine mounting box.

Move your battery as far forward as you can (in the cowl if necessary), use a heavy spinner, and if you still can't get it to balance fit a heavier battery.

check cofg with tank empty and with tank full will give you an idea of the difference, sounds like she's a tad tail heavy. Adding a spinner as Kostas has suggested will help and may be all that is...

I used longer servo arms and it is in line, however even if you leave it the servo horn should be at 90 deg with the pushrod when ail/ele surface is at neutral.

Almost ready to maiden mine (zdz 40 fitted) and was quite surprised that she seemed tail heavy. Can someone please confirm whether the c of g is measured at wing tip or root?

as standard i would say that the zenoah is the most powerful, if you go the mvvs route ditch the dustbin silencer it will kill the engine, if you fit a tuned pipe to the mvvs you will have an engine...
