Is your 3-in-1 trimmed correctly? You shouldn't have to be using rudder trim to fix that.

Okay, I went through a bunch of gotchas when I upgraded to LiPos. It's never just the battery. Here's my experience:

(1) bought some lipos and needed a way to charge them

Yes I have both installed. It works much better with the aluminum head because it's pretty. Yes the shafts aren't straight. When installing one, find the point at which it's tightest and adjust it...

Raising the throttle trim doesn't lower headspeed, it increases it. Increasing your blade pitch by modifying the pitch control links, however, will allow you to hover at a lower headspeed.
