I doubt I'll be able to get/measure the verticle CG, but what I was thinking about doing is trial and error raising and lowering the battery in the fuselage until the rudder is no longer coupled, or...

That's a great idea, I hadnt considered the "vertical" CG. It makes perfect sense considering the repairs that I made: mostly higher up towards the canopy. I'll make some adjustments and try it out....

The larger battery (1250 mah) would indeed do the job, but the flight time would be alot shorter... about 1/3 of the time shorter, right? Another problem...
