Assuming because you want to go fast I would recommend a direct drive inrunner setup. I haven't worked with inrunners all that much but I would try an Electrifly 36-50-1500 as a pretty good starting...

Did you wana go with an inrunner like the brushed setup you had or an outrunner. I can gurantee you probably couldn't get it to go a 100 with the brushed setup.

One other thing you could try is if you have a heat gun (you can get one from Harbor Freight Tools for $10) you can heat the the plastic directly over the machine and once heated put it on...

Tower Hobbies has decent priced balsa and for sticks I just buy the sheet and strip them with Master Airscrew's balsa stripper it's a lot cheaper that way.
