You don't glue the flap servos, yes with the ailerons.
The really only hard piece to worry about is the front and back formers. Alittle hard to work with. they didn't fit mine, I had to sand down...

Maybe it was me, but I had a problem with the Servo covers on the flaps. "AFTER" I made the servo mounts onto the cover, I began to seat them into the wing and it was so for off not even funny. I...

oops and

so its the wind itself that determinds what direction the sail will swing out. So that means you don't have to have left and right just one way that rolls in and the let out. true?

those little tabs that stop the over turning of the servo are cut off?

all above are correct, I want to make a comment on when you said it is fine three feet off the ground, that is because you are in ground effect. its like a cusion of air keeping the plane flying.
