Check the real easy stuff first.
I had the same problem recently and blamed everything but what was right.
Must be the servo not centering..change the servo...same problem
Rudder crooked on...

        Thats interesting stuff re the tuning techniques.That is the way I was shown when I first jumped into this RC sailing stuff(1 year).Get the rig looking right on shore and sail the boat...

Probably un nessercary to go all out and use dedicated marine paint.Although if cost is not a problem this is what I would use.Epiglass is a good brand down here in NZ.

Running Sektrum 6 with an A6000 short antennas reciever.
The only precaution I take is to make sure the antenna wires are angled at least 90 degrees from each other(usually more like 180 degrees)as...

I've just converted to 2.4 in my IOM.I do nothing special,in fact I have just dropped the reciever into the pot alongside the batteries and screw the lid back on.So far I have had no control...
