Vacuum does several things.

Primarily, it exposes the joint toreasonably high clamping force. Typical vacuum in this app is around 22" Hg or around 10 pounds per square inch clamping force....

If the amount of vertical area is small, I tend to agree, it wouldn't matter much. But if it's rather large, say greater than 10 sq inches or so, angled surfaces induce dihedral/anhedral effect...
