You will have the opposite problem. Higher wind means more torque less speed, lower amps.
To get anything big out of it, you'll need to step up to a 7x7 prop and 4s pack, but then you'll need a...

Not a good sign if the motor doesn't spin up. And the pack will put out 27 amps safely, but I believe you can actually drag more out of it then that. But at a cost to the batteries life.

If you are loosing both motor and flight controls, I would look for a poor battery to esc or esc to Rx connection. If it was an esc problem, you would not loose controls, only motor would shut down.

On a 6x4 with your set up,it's pulling 20.5 amps, which is about max for the pack.

If you have really deep pockets, see post 164.
Otherwise try a Mega 16/25/4 with a Graupner cam speed 7x7, use a PolyQuest 4s1800 20c pack, and an Ultimate ubec. You'll be running 100 mph.;)

Gen1 has 3 piece wing, look for jigsaw puzzle line about 4" in on the wing tip.
Gen 2 has one piece wing, and additional cooling holes in the bottom of the fuselage. Also it has the CG locations...

Expo will reduce the twitchyness, at center position on the sticks. Makes responses a little more smooth. I run 15% on high rates.

There have been a few on the other site E-zone that attempted this. One that was putting out over 1000 watts of power. As of yet, I've not seen a successful version. But there's always hope.
