A top wing should climb under power as the motor's centre line is below the centre line of the wing. The wing provides drag due to friction and the motor is trying to rotate about the wing axis.

I had similar ESC problems. With the motor running, activating the rudder would cause a 2 amp power drop to the motor. So replaced the ESC with a better 20A unit. No glitches so far!
