My experience,

I fly off a thick, bumpy grass runway. This plane acts just like any warbird, any bad habits and you will pooch the takeoff.

yep, this plane has a lot of drag. That is why I believe you would benefit more from a bigger motor for more torque (like a 91 2s) versus a speed setup. The extra torque from running a 12x8 really...

you will have better (easier) take offs and landings with flaps, just make sure to pick up good speed before u take off. If you don't get enough speed built up it will torque on you. Did u increase...

Whats weird is that I had to add a stick of lead in the tail (with battery in stock location) to get both of mine to balance at 6" (and thats with a 91 2s).

I flew mine at 6" without issue. It did not feel tail heavy to me (had a 91 2s)...
