Du-Bro has a small hatch latch that you could use and it only costs a couple of bucks. It's catalog No. 925. You'd have to put a small dowel at the other end of the hatch cover.

The video link was OK and that power setup seems to work well. I decided to go brushless and installed an AXI 2820/10 with a Jeti 40 amp ESC and powered it with a 3s1p 20C Kokam Lipo....

Using one 2s2p 4000mah pack should give you a SSEP flight duration of approximately 8 minutes at a full throttle current of 31 amps.
